Charles de Gaulle recognized this as well, lamenting in a famous quote, \u201c<em>Comment voulez-vous gouverner un pays o\u00f9 il existe 258 vari\u00e9t\u00e9s de fromage<\/em> ?\u201d<a href=\"https:\/\/dicocitations.lemonde.fr\/citations\/citation-6783.php\">*<\/a>\u00a0 In English, that translates to, \u201cHow can you govern a country with 246 varieties of cheese?\u201d If you Google \u00ab\u00a0how many types of cheese are there in France\u00a0\u00bb you&rsquo;ll get numbers ranging\u00a0 from 200 to over 1,000. Either way, that&rsquo;s a lot of cheese and a lot to love.<\/p>\n<p>It&rsquo;s hard to choose, but here are some of my personal favorites.<\/p>\n<p><a href=\"https:\/\/www.google.com\/search?q=pav%C3%A9+d%27affinois&amp;rlz=1C1CHFX_enUS751US751&amp;sxsrf=ALeKk00PwMRNh9aku8HYd8sW_Sqxk6cRIQ:1600889066628&amp;tbm=isch&amp;source=iu&amp;ictx=1&amp;fir=AqHbzBEdE7vayM%252CKy8GcUh7AT1lGM%252C_&amp;vet=1&amp;usg=AI4_-kTkWYvz0VCfjVva7Wp0HsKFPYUwnA&amp;sa=X&amp;ved=2ahUKEwj68I_BgIDsAhXOB50JHY3-AWgQ_h16BAgSEAk#imgrc=AqHbzBEdE7vayM\">Pav\u00e9 d&rsquo;affinois<\/a> is a creamy, square-shaped soft cheese (made of cow&rsquo;s milk and sometimes sheep&rsquo;s or goat&rsquo;s) from Dauphin\u00e9 in the Hautes-Alpes in Southeastern France, but available all over France. \u00a0I have only seen it available in the US through specialty sites.<\/p>\n<p><a href=\"https:\/\/www.google.com\/search?q=comt%C3%A9+cheese&amp;rlz=1C1CHFX_enUS751US751&amp;sxsrf=ALeKk00eSUXrbHzHs-NDwN_9WxZvc_VjsQ:1600890073581&amp;source=lnms&amp;tbm=isch&amp;sa=X&amp;ved=2ahUKEwjq1aOhhIDsAhUYVs0KHSh8AJsQ_AUoAnoECB4QBA\">Comt\u00e9<\/a> is made of unpasteurized cow&rsquo;s milk and from Franche-Comt\u00e9 in Eastern France, bordering Switzerland. Comt\u00e9 is considered semi-hard and is aged up to 36 months. It is sold in slices cut from discs. It is available in the United States at major grocery chains and cheese shops.<\/p>\n<p><a href=\"https:\/\/www.google.com\/search?q=chauss%C3%A9e+aux+moines+cheese&amp;rlz=1C1CHFX_enUS751US751&amp;sxsrf=ALeKk006WznUiBRZGXceM1DpW1Pp11ztqw:1600890250711&amp;source=lnms&amp;tbm=isch&amp;sa=X&amp;ved=2ahUKEwiG0t71hIDsAhUFVc0KHfrDDbsQ_AUoAXoECA0QAw&amp;biw=1920&amp;bih=1008\">Chaus\u00e9e aux moines<\/a> is a soft, cow&rsquo;s-milk cheese protected by a thin rind that hails from France&rsquo;s northwest. It is sold in a round format and is only available in the United States by special order.<\/p>\n<p>These are just a few of many.
